Maltose / Dextrose Syrup

1. Raw Material Preparation and Suspension Preparation
Maltose or Dextrose syrup production is the basis of starch-based sugar production processes and is carried out using corn starch as raw material. The production process begins with the suspension of starch by mixing it with water at appropriate rates (usually 30-40% dry matter).

2. Gelatinization (Cooking)
This suspension is first subjected to the gelatinization stage. The gelatinization process is carried out under high temperature (105-110°C) and pressure in Jet Cookers or pressure cookers. At this stage, the starch granules swell, burst and become soluble.

3. Liquefaction (Liquifaction)
Then the liquefaction stage is started. At this stage, the temperature is reduced to 85-95°C and the starch chains are broken into shorter dextrin chains with the addition of α-amylase enzyme.

4. Saccharification
After the dextrin syrup is obtained, the saccharification stage is started. Here, the temperature is reduced to 55-60°C and the pH of the medium is adjusted to 4.0-4.5. Enzymes such as Glucoamylase and Pullulanase are added to convert the dextrin chains into free glucose and maltose sugars.

5. Determination of Product Type
The duration of this stage and the type of enzymes used determine the type of product to be obtained;-
Short-term saccharification and special enzyme combinations with Maltose Syrup (50-70% maltose content)

Longer-term saccharification with Dextrose Syrup (80-95% glucose content) is obtained.

6. Filtration and Purification
After the saccharification is completed, the syrup is taken to the filtration process to remove unwanted sediment, color substances and protein residues. Then, it is passed through ion exchange columns to remove impurities such as salt and metal ions.

7. Concentration (Vacuum Evaporators)
After this process, the syrup is concentrated in vacuum evaporators and brought to the desired Brix degree (70-80% dry matter).

8. Storage and Packaging
The final product is stored in stainless steel tanks and offered for sale in tanker, barrel or IBC tank packages.
